Arugula with Gorgonzola, Walnuts and Orange & 5 Unique Dressing
Good source of Vitamin K (38% of daily needs) and Vitamin C (40% of daily needs)
Contains mono and poly-unsaturated fatty acids
Incredibly easy and quick salad to make. Can be made while main dish is being cooked.
Arugula, ~4 cups
Oranges, 1 medium, peeled and sliced
Gorgonzola, ~50gr/1,5oz, crumbled
Walnuts, a handful chopped
5 Unique Extra Virgin Olive Oil, 4 TBS
Red Wine Vinegar, 2 TBS
Mustard, 2 TBS
Salt and Pepper to taste
In a large salad bowl add 5 Olive Oil, Vinegar, Mustard, salt and pepper and mix well with a whisk.
Add arugula, half the walnuts, orange pieces and cheese and mix to coat.
Garnish with rest of walnuts, orange pieces and cheese and serve.
