Ingredients

  • Veal sirloin steaks, fat trimmed, 4 – 180g/6-7oz each
  • Balsamic vinegar, 1/3 cup
  • 5 Ultra Premium (for the marinade), ¼ cup plus more for drizzling
  • Salt and Pepper to taste (Recommendation: ~ ½ tsp each in total)
  • For the Warm Vegetables:
    • Broccoli, 1/2 head, cut into pieces
    • Baby potatoes, 12 halved
    • Carrots, 4 chopped into ~1 inch/3cm pieces
    • Juice of one lemon
    • 5 Organic, 2 TBS
  • Salt and Pepper to taste (Recommendation: ~ ½ tsp each in total)

Execution

  1. Preheat your oven to 200C/390F and place a piece of parchment paper in a medium baking dish. Set aside.
  2. Place steaks in a medium bowl and season liberally with salt and paper.
Tip: Freshly ground pepper makes a real difference in taste.
  3. Pour the balsamic vinegar and 5 olive oil over steaks and mix until all steaks are coated. Cover and let them marinate for 15 minutes (minimum) in room temperature.
  4. While meat marinates, add potatoes and carrots in a medium pot, fill with water until vegetables are just submerged and put on the stove top on medium heat. Boil for about 10-15 minutes or until vegetables are slightly soft (check with fork for doneness).
  5. Using a spider or big spoon, move the vegetables on a plate and cover them to keep them warm. Without changing the water of the pot, add the brocoli and boil for about 10 minutes.
  6. While brocoli is boiling, place steaks in the baking dish and put them on the middle rack of the oven. Bake for about 15-17 minutes depending on your doneness preferences. At this point the broccoli will be ready so set it aside with the rest of the vegetables to keep it warm.
  7. When the steaks are done, take them out of the oven, cover with aluminum foil and let them rest for about five minutes.
  8. Meanwhile dress the vegetables with lemon juice, 5 olive oil, salt and pepper. Lightly mix to combine.
  9. Serve family style or in individual plates, drizzle some 5 Olive Oil and enjoy!

Pairing tip: Pair with a Malbec.
