Rosemary Scented Dip with 5 Unique Extra Virgin Olive Oil

Letting the dip “sit” for about two hours will allow the flavors to better blend. Lightly mix before serving and sprinkle rest of the cheese last minute.
Experiment with a variety of herbs such as fresh oregano or basil.
This recipe can be used as a marinade for meat, chicken or potatoes (Omit the cheese).

Ingredients

  • 5 Unique Extra Virgin Olive Oil, 1/2 cup
  • Fresh rosemary, finely chopped, 1 TBS
  • 5 Balsamic Estate Vinegar, 2 TBS
  • Parmesan cheese, grated, 3 TBS, divided
  • Sea salt, 1/2 tsp or to taste
  • Pepper, finely ground, to taste

Execution

  1. Using a jar with a lid or a small blender, mix/shake all ingredients for about 10-15 seconds, except half portion of the cheese.
  2. Add sliced mushrooms and toss to combine. Finally add spinach and lightly mix.
  3. Pour dip on a serving plate, sprinkle rest of cheese and serve immediatly with some crusty bread.
